Heat the olive oil on medium heat in a large cooking pot and sauté the onion
Immediately pour in all the vegetable broth , stir, and bring it to a simmer.
Next, add in the cabbage and carrots then reduce the heat to medium and place the lid on the pot.
Cook the cabbage soup for 12 minutes then remove the heat before the cabbage becomes over cooked.
