Sweet Potato Brownies Recipe

I love sweet potatoes! It’s the perfect starch for healthy sweets.

  • 2.5 Cups Skin less sweet potatoes Purée
  • 1 Cup Quick oats Dry
  • 1 Cup Plant milk I used almond milk
  • 1/2 Cup Raw cocoa powder
  • 1/2 Cup Maple syrup Sugar free optional
  • 1 Tbsp Vanilla extract
  • 2 Tsp Agar powder
  • 1 Tbsp Cinnamon
  • 10 Sliced Strawberries


  1. Soak oats in milk for 30 minutes at room temperature 

  2. Preheat oven to 350• F

  3. Purée oatmeal with food processor or blender. Add cooked sweet potato and blend. Add remaining wet ingredients (other than strawberries) and blend.
  4. In a separate bowl combine all dry ingredients and whisk.
  5. Add wet to dry and blend.
  6. Pour batter into greased or lined baking pan (9x9 is fine)
  7. Drop strawberries sporadically throughout batter
  8. Bake for 20 minutes
