Healthy Pudding Bon Bons

Bon Bons are crazy delicious and fun to eat! These ones are actually a bit healthier than other types because the filling is made with oatmeal purée.

Ingredients

Dry Ingredients

  • 1 Cup Quick oats oatmeal Dry
  • 1 Oz White chocolate pudding mix Jello brand IS vegan
  • 1 Cup Dairy free dark chocolate chips for baking

Wet Ingredients

  • 2 Cups Plant milk
  • 1 Tbsp Vanilla extract

Instructions

  1. Soak quick oats oatmeal in plant milk for 30-40 minutes at room temperature.
  2. Use a blender or food processor to turn oatmeal in a purée.
  3. Pour oatmeal Into medium mixing bowl. Add pudding mix and whisk thoroughly.
  4. then set in freezer to chill for 20 minutes or so in order to harden enough to scoop into balls and hold shape. 
  5. Scoop into balls and set out on parchment lined tray. Set back into freezer for 30 minutes or so. 
  6. Melt chocolate chips in microwave.

  7. Roll oatmeal pudding balls into melted chocolate and back onto tray. 
  8. Set into refrigerator until chocolate hardens.
