Ingredients

  • 2 Large White sweet potatoes Peeled/cooked
  • 1 13 oz can Full fat canned coconut milk Chill for minimum 4 to get the cream to separate from the clear liquid. Use cream and discard liquid
  • 1 Tbsp Vanilla extract
  • 2 Tbsp Maple syrup or agave You can actually use any sweetener you prefer
  • 1 Cup Dairy free white chocolate chips for baking
  • 1 Tbsp Agar powder

Instructions

  1. put your full fat canned coconut milk in the refrigerator for 4 hour

  2. *meanwhile* Skin and cook your sweet potatoes. Anyway is fine (microwave, bake, boil). Allow them to cool off. 
  3. Scoop coconut cream (minus the clear liquid at the bottom) into a medium mixing bowl.
  4. Add cooked skinned sweet potatoes and blend. 
  5. Add sweetener and agar and blend

  6. In a medium cooking pot bring the sweet potato batter to a boil. Simmer for at least 5 minutes to activate the gelatin in the Agar. 
  7. Pour into molds (or balls on parchment) and freeze for one hour (freeze in order to hold shape when dipped in melted chocolate)

  8. Melt white baking chocolates in microwave. Smother frozen cheesecake balls in melted chocolate then allow to rest in the refrigerator. Chocolate will harden into a candy shell.
