Ingredients

Bottom Layer (cashews and guava)

  • 2 Cups Cashews Unsalted
  • 10 Oz Guava Paste
  • 2 Tsp Lemon juice
  • 1/2 Tbsp Vanilla extract
  • 2 Cups Plant milk I used coconut milk

Second Layer (figs)

  • 3/4 Cup Dried figs I counted mine at 18 dried figs (remove little stem if it’s there)
  • 1 Cup Plant milk

Topping

  • 1 Medium Banana
  • 4 Oz Guava paste

Instructions

Preparation/ Soaking Time

  1. Soak Bottom (cashew) Layer overnight (8 hours minimum)
  2. Soak Second (Fig) Layer ingredients one hour minimum (I soaked them overnight though)

Bottom (cashew/guava) Layer

  1. Blend all ingredients together until thoroughly combined 
  2. Pour into preferred cake pan (mine was 6x2 with a latch) and I used wax paper to avoid the cake sticking to the bottom of the pan
  3. Put into freezer for minimum 1 hour

Second (Fig) Layer

  1. Blend Fig Layer ingredients until thoroughly combined 

  2. Pour on top bottom layer and return to freezer for another hour

Topping

  1. I used my hands to mush the banana and guava paste together but you could blend it as well.

  2. Spread out on the top of your cake and return to freezer for another hour

  1. Best served medium frozen but before its rock hard
