These simple muffins are plant based and gluten free.
Preheat oven to 350 degrees F
Combine all ingredients in a large mixing bowl and blend with a hand held electric mixer
Allow batter to sit for about 30 minutes to allow oats to absorb some liquid
Prepare muffin baking pan either by greasing or lining with paper cups (I sprayed mine with zero calorie non stick spray and did not use paper cups)
Pour oatmeal batter into 9 cups for larger muffins or all 12 cups for smaller ones
Bake for 12 minutes
